Vegan French Toast

    Mix all of the ingredients except bread in a medium sized bowl.
    Dip one slice of bread in mixture to cover both sides.
    Cook on griddle or skillet 2 minutes on each side or until golden.
    Repeat with second slice of bread.
    Serve immediately with favorite syrup or fruit topping.


    1/2 cup plain rice milk, nut milk, or soy milk
    1 tablespoon whole wheat flour
    1/2 tablespoon nutritional yeast
    1/2 tablespoon sugar
    1/2 teaspoon ground cinnamon
    1/2 teaspoon vanilla extract (can substitute for almond)
    2 slice whole wheat bread, preferably day old
