Pineapple Upside Down Cake

    Instructions

    Place pineapple in a silicon pan, lining the bottom. Add 1/4 cup maple syrup over the pineapple.
    Mix remaining ingredients together in a bowl and stir batter well. Pour batter over pineapple.
    Bake at 375F for 30-40 minutes until browned and doesn’t stick when a toothpick is inserted. Let cool and serve.

    Ingredients

    1 pineapple, cut into rings or chunks
    1 1/2 cup flour, whole wheat pastry or gluten-free
    1 cup plant-based milk
    3/4 cup maple syrup
    1 tablespoon lemon juice, freshly squeezed
    2 1/4 teaspoon baking powder
    1 1/2 teaspoon vanilla
    1/2 teaspoon cinnamon
    1/4 teaspoon nutmeg
