Oat Cookies

Ingredients
1/2 cup brown sugar1/3 cup of sunflower or safflower oil
3/4 cup plant milk
1 cup flour
1/2 cup oat flakes
1/2 teaspoon sodium bicarbonate
cinnamon
1 large lemon/orange, zest
Instructions
In a bowl, mix sugar, oil, and milk.
Add the lemon zest, cinnamon, flour, and baking soda and involve all. You may add a little of lemon or orange juice, or more milk.
Form dough into balls, place on a baking tray lined with a sheet of parchment paper. Gently flatten balls with a fork.
Bake at 180 degrees C for 12 minutes.
