Italian Tempeh Sandwich

Ingredients
3 oz tempeh, sliced into thin strips¼ cup spinach
1 teaspoon nutritional yeast
1 sandwich roll, inside breading removed
1 small-medium tomato, chopped
1 shallot, chopped (or 2 tablespoon chopped onion)
1 clove garlic, minced
2 mushroom, sliced
1 tablespoon basil
1 teaspoon Italian seasoning
1 yablespoon olive oil
1 teaspoon balsamic vinegar
Instructions
Mix together in medium bowl the shallot (or onion), garlic, basil, Italian seasoning, olive oil, and balsamic vinegar.
Place the tempeh, mushroom, and tomatoes into the above mixture. Allow to marinate for at least 1 hour.
Spread contents of bowl into a shallow baking dish and bake at 400°F for 15 to 20 minutes.
Place in roll and top with spinach and nutritional yeast.
