    Instructions

    Mix all dry ingredients into a bowl.
    Slowly mix wet ingredients in with the dry ingredients, batter should be quite thick like molasses or porridge.
    Heat up coconut oil in a 12 inch skillet over medium high heat.
    Pour batter into skillet and spread evenly.
    Cook for five minutes (until you can see bubbles forming, like pancakes).
    Place lid on top to cover and cook for an additional five minutes.
    Turn off heat and leave lid on top continue steaming for three minutes.
    Remove lid and allow to cool for a few minutes.
    Cut into desired portions and enjoy!

    Ingredients

    1 cup rice flour
    1 teaspoon baking soda
    1/2 cup granulated sugar
    1/3 cup coconut oil, melted
    1/3 cup coconut milk (or plant milk of choice)
    1 teaspoon apple cider vinegar
    2 tablespoon crunchy peanut butter (or nut butter of choice)
    1/3 cup cocoa
    100 gram dark chocolate, chopped (or dark chocolate chips)
    2 tablespoon toasted pumpkin seeds
    1 egg replacement (flaxseed egg, 1 large ripe mashed banana or 1/3 cup applesauce)
    Coconut oil, for cooking

    Serving Size

    24 brownie bites or 12 brownie slices
