Garbanzo Tuna Salad


Garbanzo Tuna Salad

Ingredients

3 cup (530g) cooked garbanzo beans
1 cup (85g) carrot, grated
1/4 (30g) cup red onion, diced
1/2 (60g)cup celery, diced
1 teaspoon (4g) mustard
1/2 (120g) cup vegan mayo
2 (4g) teaspoon dulse flakes
1/2 (3g) teaspoon salt

Instructions

Place garbanzo beans in a food processor and pulse several times until the beans are flaky. Don't over mix or they will turn mushy.

Place garbanzo beans into a mixing bowl and add the remaining ingredients to the bowl. Mix until all ingredients are combined.

Variations: Serve as a sandwich (like a vegan cheese tuna melt) or with crackers as a snack.
You could use canned garbanzo beans, or if you have the time cook your own. If using canned, be sure to drain and rinse them before using.
