Coconut Vanilla Chia Pudding

    Instructions

    In bowl or cup, first place in chia seeds, then pour in the coconut milk and vanilla essence and stir.
    Cover and leave in fridge for at least 2 hours.
    When ready to eat, top with fresh cut fruit.

    Ingredients

    1/8 cup chia seeds
    1 teaspoon vanilla essence
    3/4 cup coconut milk
    1 banana
    1 kiwi

      This is a very good breakfast pudding.
      I replaced the kiwi with some mango and 1 chopped up date!
      Delicious!
