Coconut Milk Rice Porridge

    Instructions

    Add rice and 1 cup of water in a pan and bring to a boil.
    Cover and let cook for 10 minutes over medium heat.
    Add 1/2 cup coconut milk, a pinch of salt and sweetener to taste. Mix together well and cook for another 5-7 minutes.
    Top with cinnamon and optional toppings (berries, etc.). Enjoy.

    Ingredients

    1/2 cup white rice
    1 1/2 cup water
    1/2 cup coconut milk
    Cinnamon
    Pinch of salt
    Sweetener to taste (agave syrup, dates, etc.)
