Beet Pepperoni

    Preheat oven to 350F.
    Peel and slice beets as thin as possible into rounds.
    Combine olive oil and spices to create the marinade.
    Add sliced beets to oil mixture and let marinate for at least 15 minutes.
    Place the beet slices on a baking sheet in a single layer and roast for 15-20 minutes (the beets should start to crisp slightly and cup).
    Remove the beets from the oven and drain on paper towels


    5 beets, peeled and sliced thin
    1 cup olive oil
    2 teaspoon sea salt
    2 teaspoon calabrian chili powder (gives the pepperoni taste)
    1 teaspoon garlic powder
    1/4 teaspoon ground fennel seed
