Banana Muffins

2 large ripe bananas
1 cup flour
1-1/2 tablespoon oil
2-1/2 cup orange juice or water
pinch of salt
1/2 teaspoon baking powder
dried fruit or nuts


In a large bowl, mash bananas, add juice or water, and oil.

In a separate bowl mix flour, salt, and baking powder.

Add sugar to mashed bananas, then add flour mixture.

Combine well, then add in optional dried fruit or nuts.

Pour mixture into muffin tins. Bake at 180C or 355F.

Use a toothpick to see when the center of the muffins come out clean.
