I'm one of two owners of a small Turkish restaurant, which is not vegetarian. The name and concept appear at first to be meat focused, but in fact, our menu is very veggie-forward. In Turkey, average meat consumption is less than 1/3 that in the US, in spite of about 5% of the US population being vegetarian, and less than 1% in Turkey. So it turns out that Turkish food in general is veggie-forward. We cannot change the world just by preaching to the choir. Rather, we are introducing delicious veggie-based foods to people who don't call themselves vegetarian, and convincing them that it is so delicious that they should eat this more often. 😉
