One of my favorite cookbooks is Nava Atlas' The Vegetarian 5-Ingredient Gourmet. It's a great everyday cookbook for when you want to be able to make a simple but tasty meal with whatever you already have around the house. A number of the recipes are vegetarian, not vegan, but in many cases, Atlas mentions how you can veganize the recipe.
