- I live in Scotland and I would love to say I don't eat meat but I do. We eat a mostly vegetarian diet but my youngest IS vegetarian and it is easier for to make for 3 rather than just one. He has been vegetarian for 4 years now and I admire him for it. I recycle as much as I can and also pick up litter. I hope I can help the environment by doing my bit.

Reasons why I prefer to eat vegetarian or vegan:
I feel a lot healthier physically when I eat a vegetarian diet. Mentally I am at peace with myself that there is not a chicken in the fridge that is desperate to get out.
I joined HappyCow Members Community because:
My youngest son is vegetarian and although I know I cook good food for him I want to be aware of what is available for him around the world. He wants to be a vegetarian chef but I don't know where he can train.
Here are some places I've been that I liked... and places that I would like to visit one day:
I have visited a beautiful place in Normandy that I adored. I loved New Zealand and would like to go back one day.
Some of my favorite veg*n foods include:
I love Spicy Bean Stew. Home grown toamtoes and broad beans and some of the lovely Flavoured oils I make myself from my greenhouse Chillies.Quark with chives and baked potatoes of any kind. Homemade hummous. Quorn stirfry with sweet chilli. Spicy Parsnip soup in fact any kind of soup. Pasta and vegetable sauce.
Here are some books, movies, magazines, and my favorites that I would recommend to other HappyCow members:
Fern Gully(The Last Rainforest), Being There(Petr Sellers and Shirley MaClaine) Martin Lewis's Book on how to live Old Style(lots of ways to save money and become environmentally friendly. Visit the library to get books or charity shops. I will read anything. Poetry books, or gather your own favourites and put in your own book, with little subtitles and notes.

I am going to Kerala in India in November. The area is mostly vegetarian, I hope to come back fully converted. Keep all fingers and toes crossed for me. I have cut down on meat by more than 75 per cent only the last 25 to go.
