More About Me

Reasons why I prefer to eat vegetarian or vegan:

I prefer vegan because I care enough about this planet and myself to do what is best for both. MY health and my home are non negotiable therefore I make the conscience choice to eat and live right everyday.

I joined HappyCow Members Community because:

I was invited by a friend who was more than right when she said this was the best community to share and learn where vegans like myself can enjoy a great meal, good friendship and excellent advice.

Here are some places I've been that I liked... and places that I would like to visit one day:

Choices can be limited when one is vegan, however with an awesome website like Happy Cow hopefully not too long in the future those choices will be many. Considering Las Vegas has so much to offer the connosisseur these days I'm hopeful that vegan options will be plenty and the variety never ending.

I am a sucker for simplicity. As a busy woman on the go smoothies are a staple. When out doing business, dry nuts, fruits and veggies are a great pick me up not to mention every once in a while it is fun to pull out all the stops and create a vegan masterpiece that will have even the most ancient of carnivores drooling at the mouth! My fave; black bean chipotle tacos!
