I have been a vegetarian since my teens and a vegan for over 10 years. ‘I got to a certain age and decided I could do more to reduce animal suffering by cutting out dairy. I thought the transition would be difficult but there is so much choice out there today for vegans, it has been easy. There are a lot of misconceptions about veganism. The idea that the food is uninteresting and tasteless being two of them, but it is actually a very creative cuisine with many colourful and mouthwatering recipes. I have discovered vegetables and fruits that I never dreamt existed. People would not realise some dishes were actually vegan. In the Highwayman we also offer vegan wines too including Prosecco and Champagne! Many families have members who are vegetarian and vegan. It is not a competition, just different. My aim is simply to raise vegan awareness and welcome everyone at the Highwayman no matter what they choose to eat on my menu.
