Reasons why I prefer to eat vegetarian or vegan:

I have only recently become vegan and that was because of the book The China Study. The research is incredibly persuasive to become vegan. For the past 5 years I have been increasing my fruits, veggies and grains. This Aug I took one meal at a time and cut out the meat and dairy.

I joined HappyCow Members Community because:

I am not in the company of vegans or vegetarians. I'm am coming across a lot of resistance from my family saying this is not a healthy lifestyle--that one must eat meat. So I wanted to connect with like minded people for my sanity.

Here are some places I've been that I liked... and places that I would like to visit one day:

I've been to all but 8 states, Mexico and Canada. I really have enjoyed Mexico. I feel most at home in Northern MN. My plan is to get to Australia within the next couple of years. Then Alaska.

I just tried Mexican Chipotle sweet potato casserole from littleleopardbook.com that I found through Yummly. That was an awesome recipe with verde salsa. HolyCow.com also has some to die for butternut squash pumpkin pie and vegan banana nut muffins.
