"The China Study", a must read. "Whole", its sequel, is excellent as well; "Plaidoyer pour les animaux" by Matthieu Ricard (for French speakers, an excellent book that, among others, reflects on how the relationship between humans and animals evolved from our first days); "Just enough" by Azby Brown (a brilliant historical research about late 17th century Japan and their sustainable, near-vegan way of life)
