My partner, Coen Wubbels, and I left the rat race in 2003, bought an antique Land Cruiser and drove from the Netherlands to Vietnam. That took 3.5 years. By then we were addicted to our freewheeling life, so we shipped the car and have been exploring South America since 2007. We enjoyed the vegetarian lifestyle in India, and the plant-based diets of South East Asia. After six years of eating the meat-heavy dishes that characterize South America, we decided to return to a plant-based diet for health, environmental as well as animal-welfare reasons.
