More About Me

Reasons why I prefer to eat vegetarian or vegan:

There are many reasons - We became open to receiving the information when learning about the health benefits. We read the China Study, watched FOK, watched Vegucation, watched Fat Sick and Nearly Dead. In January we were enthralled with How Not To Die and really shocked by the role lobbyists play in the food pyramid, research on causes of disease, impact on school lunches, subsidies to processed food makers, and the education that physicians receive. It was a revelation to understand the system. We dove into more information supplied by athletes like Scott Jurek and Rich Roll, by doctors like Barnard, Esselstyn, Ornish, and Campbell and watched more documentaries about factory farming and related. The one key reason I will never eat meat again is because one of my dogs reminds me of a pig and the other reminds me of a cow. We nicknamed one "piggy" and the other "the bull". Once that light was switched on, that farm animals are no different than the dogs we loved, we dropped our knives forever.

I joined HappyCow Members Community because:

None of our close friends or family members are vegan, we need all of the community we can get to support us. I also would like to find and help contribute to the information on the small towns I visit for work.

Here are some places I've been that I liked... and places that I would like to visit one day:

I love Paris, Barcelona, Mallorca, Florence, Aruba, Southern California, the Adirondack Mountains, and The Finger Lakes. We would like to visit Costa Rica, Ireland, Greece, Hawaii.

Some of my favorite veg*n foods include:

We love making different things into a taco - seasoned lentils or black beans, rice, grilled veggies, tomato, and always with a cold slaw like cabbage/corn/avocado. ETF! Empty the fridge recipes are always the most fun!! We throw bunch of vegetables into pan, onto the grill, or into the oven. Always with a lentil or bean, often with quinoa or rice. We love different sauces and seasonings we have been throwing together. No recipes needed, doesn't need to be complicated :)

Here are some books, movies, magazines, and my favorites that I would recommend to other HappyCow members:

I recommend the Rich Roll Podcast - he has some great leaders of the movement on there.
