Cashew Chia Seeds Pudding Recipe Makes 2-4 servings Ingredients ¼ cup chia seeds 1 cup cashews 2 cups water pinch of salt 1 tbsp. raw honey or agave nectar Directions 1. Prepare the cashew milk: Put 1 cup cashews, 2 cups water, a pinch of salt, and 1 tablespoon of natural sweetener of your choice. Raw honey or agave nectar are my favorites. 2. Blend ingredients on high for about 90 seconds. 3. Strain the mixture through a nut milk bag or a strainer. This recipe yields two cups of milk and will last in the fridge for four days. 4. Put the seeds in a bowl and stir in 1 cup of milk. 5. Whisk together with until the seeds are well incorporated – about 10 minutes. The pudding will get clumpy if you don’t keep stirring. You’ll know it’s ready when it sets and gets a pudding-like texture. 6. Add the toppings of our choice – chopped apples, pitted cherries, chopped pecans, currants, or raisins are all great options. Kitchen notes You can experiment with the consistency by adding more chia seeds or more milk, but the general ratio is 4:1 (milk: chia) You can substitute the cashew milk for almond milk To save time, make a bigger batch and save it in the refrigerator for 4 days For a sweeter pudding stir in ½ teaspoon vanilla, ¼ teaspoon cinnamon, and 1 teaspoon maple syrup Nutritional facts Calories: 203kcal Total fat: 11.39g Total dietary fiber: 12.24g Protein: 5.62g Total sugars: 6.53g Sodium: 5mg Calcium: 189mg Phosphorus: 284mg Potassium: 48mg Zinc: 1.05mg Copper: 0.06mg Manganese: 0.65mg Source: Post Date: 03/22/16, Replies: 1 03/22/16 1

Shelf life Hello, I have a tough question: recently I started to make vegan ganache at home. I think that the most appropriate substitution for heavy cream is "almond cream" (almond milk with a lot a almonds and a bit of water: around 25% fat). It tastes delicious but the problem is shelf life: after a few days it loses its taste. I don't know if is the almond cream or the fresh fruits I use for the ganache. So, someone have a suggestion? Raw Creamy Broccoli Soup Ingredients 3 cups filtered and warmed water – Not boiling 2 cups chopped, raw (uncooked) broccoli rabe 1 cup of raw cashews 1 T raw agave syrup (or 1 tsp of raw honey) 1 large avocado 1 clove of garlic 1/2 to 1 tsp. sea salt 1 tsp. onion powder. (You can use raw onion, but I find it a bitter in the soup.) 1 T. cumin powder Instructions Blend all of the below ingredients in a high-speed blender. Soy free options? Hi everyone, I'm new here, and trying to come up with some vegan or vegetarian recipes that do not include soy, as I've been instructed by my doctor to stop eating soy products. I guess I have been in a convenience rut, and didn't realize how many vegan convenience foods I was relying on, and they are almost 100% soy-based. Vegan tasty pie crust Almond Pie Crust Number of Servings: 8 Approximate Calories per Serving: 157 Approximate Percentage of Fat: fairly high, from almonds Time Required to Prepare: 20 minutes ____________________________________________________ Ingredients: ½ cup Almond Butter 1-½ cup Whole Wheat Pastry Flour ½ cup Almond Flour (can fine grind almonds to a fluffy powder, if no flour available) ¼ teaspoon salt ¼ - ½ cup cold water Preparation Steps: 1. Mix pastry flour, almond flour and salt in a large mixing bowl 2. With a pastry cutter, cut almond butter into the dry mix. Only cut in until you get small lumpy kernels of dough. You may need to rub the flour mix between your hands to get the almond butter mixed in well. 3. Sprinkle in water and turn dough, just until when you try to make a ball of the dough, it holds together. 4. Sprinkle a little water on the counter and place one large piece of wax paper on the moistened counter. This keeps wax paper from slipping in next step. Two pieces of wax paper will be stronger so you can slide the flattened dough onto a cookie sheet and flip it on to the pie pan. 5. Place the large ball of dough on wax paper, add another piece of wax paper over it and flatten by hand, then roll with rolling pin until about ¼ inch thick, keeping shape round to fit in pie pan. 6. When correct thickness, peel back top wax paper slowly, and then flip into pie pan, peeling off remaining layer of wax paper. 7. Shape to pan and flute edges. 8. If you will be cooking a pie that cooks for a long time or at high temperature, and could burn the top edge of crust, shape a long strip of aluminum foil and place carefully just over top edge of pie crust, being careful to not extend the foil into pie filling. peeling vegetables Good morining, how are all of you? Healthy eating and food waste Hi everybody, I've recently started a project to help busy people having a healthier lifestyle, cook better, and reduce food waste. Vegan Banana Muffin Ingredients - 3 cups all-purpose flour 1 cup white sugar 1/2 cup brown sugar 2 teaspoons ground cinnamon 2 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon ground nutmeg 1 teaspoon salt 2 cups mashed ripe bananas 1 cup canola oil 1 cup coconut milk Directions Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners. Mix flour, white sugar, brown sugar, cinnamon, baking powder, baking soda, nutmeg, and salt together in a large bowl. Stir bananas, canola oil, and coconut milk together in a separate bowl; mix banana mixture into flour mixture until just combined. Fill muffin cups with batter. Searching for copies of lost recipes.... Perhaps there are others of you out there who have also lost recipes you really enjoyed. I'm hoping we can help each other. My mother used to make a vegetarian bulgur casserole that was from Susan St. James. I believe it was published in a magazine sometime in the 1970s.
