They have the "proteins" in a case just inside the kiosk. Not sure if they make the patties/falafel/dogs at a central location and then package them and deliver out to the kiosk or if they buy pre-packaged ones. They remove the proteins from the package and then assemble the sandwiches at the kiosk with all the fixings. We ate the "hot dog", which was slightly spicy on a white loaf with lettuce/pickles/cucumbers(wish I had taken a picture). It was tasty. We don't typically eat packaged foods, so didn't try anything else. I can see how this would be popular when you want something fast and inexpensive. When we talked to another owner of another vegan shop, they indicated its been successful and the kiosk is continually re-stocked. It's so popular they are open until 4a. I would say it's good for what it's intended. Quick, easy, fast food.
