The key point to note is management strategy is NOT vegan. The chef since it opened last year runs an all vegan kitchen. However if / when he moves on, management are happy to run a lacto - ovo vegetarian operation. It's managed by the people who run Kadoorie Farm. They keep chickens at Kadoorie and so are likely to use those as a source of eggs for the kitchen in this place if the chef will allow it. Vegans should always ask what is and what isn't vegan.
