We stayed at the Casa del Toro B&B over the 4th of July weekend. The breakfast is vegetarian as each day there was an egg dish of some sort and there was cream for the coffee, but otherwise, it was all vegan (although most of the guests didn't realize it!). Chef Mariela Rodriguez is vegan herself and she was so nice and friendly. She made us additional vegan dishes on top of what was already being served to everyone (she made us a tofu scramble w/spinach, mushrooms and sausage and a tempeh scramble w/kale, beans and squash). For everyone, there was homemade granola/mueslix with almond milk each day with everything else different every day. There were blue corn pancakes, garlic bread, polenta, grits, soyrizo stuffed mushrooms, roasted potatoes, homemade salsa, banana pudding, cornbread, fruit and more over the course of 3 days. Many people were guests at the B&B, but locals stopped in for breakfast as well. Everything was excellent and fresh. Definitely let Mariela cook for you! Her own website is www.vegansantafe.com
