While on our trip in Peru, we ate dinner at Prasada one night and were quite pleased. The guy spoke English and was super nice, so it was easy to modify any menu items to vegan (he even noted he needs to add more vegan items!). We each got a papaya juice and shared the margarita pizza, the mediterranean pizza and the hamburger sandwich (all with no cheese). It was all flavorful and filled us up. We sat outside the service window on some stools and enjoyed the evening. Check it out if you are in Cusco.
