I worked at Rosie's for 8 months. Most of the things they cook are cooked with Chicken Broth and the Tofu is fried in the same oil they fry all of the other meat. Some dishes even use some of the oil they use for cooking the chicken, to cook some of the vegetables. Their "vegetable pho" is put IN beef or chicken broth. When I worked there, I learned how to cook vegan/vegetarian versions of their food. The main cook, Su Ma, learned what he called "cooking for temple." Which means he cooked it the way buddhists would eat. So, perhaps you can ask Su Ma to cook you a dish "for temple" and he'll try to make it free of fish sauce, chicken broth, meat, etc. P.S.: Even the vegetable/tofu vermicelli comes with a sauce that is made from squid and oyster.
