Le Crobag is a very popular german bakery-chain which can be found in nearly every major train-station in Germany. I was very glad to find out, that they have recently started featuring some vegan options. They now have a cucumber-cream baguette and a tofu--tomato-basil baguette. The cucumber baguette is a little plane, but fine. But I definitely recommend the tofu-basil baguette for any vegan in a hurry ;). Other options (available in some stores) include a massive mixed garden salad and a cous-cous salad, which are quite fulfilling :).
