I just found out all the servers, managers, and juice bar staff (and of course owner) are vegan. This is the ONLY place in NYC I've been to like this and for this reason they get 5 stars. At the bottom of their menus it says "first and foremost animal caring" Kudos to them! Also I must mention Seitan Frites Au Poivres. SO amazing (especially for those who like pepper as much as I do). Raw Beet Ravioli appetizer with house-aged cashew cream ricotta was completely unique and beautiful. A little noisy, but otherwise pleasant.
