That sounds like a miscommunication? Vegetarian options are labelled and allergens given on the menu. Even if all the (implicit) vegan options were not actually vegan somehow, there's still stuff like cucumber and avocado maki? I cant imagine how ar least those wouldnt be vegan? Never underestimate how many people working in restaurants dont really know exactly what vegan means 🤷
