Saying “Falafel Shawarmas” is like saying “Hummus Gyros” — two things that can be in the same pita, but are not the same thing. “Eat it plain or with eggplant or cauliflower”... like, cool, but that’s not a shawarma anymore, that’s a falafel wrap with toppings, and we’ve been doing that for decades, not reinventing food.
