Hi there, I wanted to reach out to you personally after reading this review. I am a very nitpicky and detail orientated especially whenever we have vegan clients visit the bistro. I am well versed in raw plant based cuisine and can assure you that all products using animal products have equivalent vegan substitutes and are available once communicated to the team. It can be expensive to provide plant based items all year round and most of these ingredients are also perishable. We like to serve our clients fresh and good quality food as it is one of our core values as a business. Hopefully with more clients like yourselves we can establish an entirely plant based eatery in the future where people understand the benefit of such a diet from a holistic point of view as well as from an environmental and sustainable perspective.
