For example we stayed in Kyoto at Kyomachiya Ryokan Sakura Urushitei where they offer a really nice vegan Japanese breakfast. Altogether Kyoto, Tokyo, and Osaka had plently of vegan restaurants and options! Smaller places are probably more difficult but I don’t (yet) have much experience on that!
