I agree that it is a lot to run up and down the stairs, wash up, prep the food, check the toilets and serve by yourself. All this manic running around creates a crazy environment which is not relaxing to dine in and evidently leads to delays and mistakes with orders. Perhaps fine if you want that Fawlty Towers vibe.
