Hello, I am the restaurant owner and a long time vegan. Thank you for your review and sharing your experience with us. As for tofu in the mole dish, we have intentionally left it without much seasoning because we wanted mole to be the star of the dish. Mole has such a complex flavor that any other flavor in the tofu could potentially clash with it. I am glad though you liked mole sauce. We make it in-house and I'm very proud of our family recipe. Hopefully, you will visit us again and try other dishes.
