Please forgive my belated response to your comment. I am very happy to clarify some of the issues you have pointed out. Venice is a unique and complicated city. A restaurant that is close to P.Roma (the last location where vehicles can deliver produce) has the advantage to be able to pick its suppliers at the same sales price as the rest of the mainland. I, on the other hand, cannot choose from whom to purchase or when to receive goods. The organic food suppliers who are equipped with boats to deliver to businesses inside the city are very few and e?ensive. This e?lains why for the last 10 years I have been the only one continuing to use organic produce inside the city. In order to keep the costs down I decided to organize my business as a deli rather than a restaurant. This choice limits me in various ways by law. For instance, I have to heat food in a microwave - though I always respect customers’ wishes if they prefer not to have their food heated. Despite its limits, however, this setup allows everyone inside the city to enjoy quality food while also respecting the earth and life.
