Superbowl Sofritos

Having a Superbowl party this year? Try out these Superbowl Sofritos. This recipe will feed about four hungry people as a main meal, or lots more as an appetizer. You can easily double or triple the recipe, and you can decide how you want to serve it…either more as a meal, or as something for your guests to nibble on. If you want to serve it as an appetizer, use big corn tortilla chips to scoop up the Sofritos. You could also use Romaine lettuce leaves, warm corn tortillas (that are on the smaller side), or taco shells. If you want to use it more as a main dish, serve it inside of a sprouted tortilla, or over rice. Now the fun part is deciding what you want to top your Sofritos with. You are only limited by what you like! Some suggestions are corn salsa, chopped avocado, sliced olives, sauteed mushrooms, cilantro, and for crunch…some chopped up Romaine lettuce. I like to top mine with avocado and cilantro. Don’t forget to include some Vegan Garlic Aioli as the finisher!

SUPERBOWL SOFRITOS

Ingredients:
1-2 T. Olive Oil
1 onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 – 16oz package of super firm tofu (not packed in water), crumbled
2 T. chili powder
1 t. salt
1/2 t. pepper
1  1/2 C. water + 2 t. vegetable bouillon paste (or 1  1/2 C. rich vegetable stock)
1/2 T. tomato paste
1/4 t. liquid smoke
1  1/2 T. Sriracha sauce
8-10 grape tomatoes or small cherry tomatoes, chopped

Directions:
Heat olive oil in a large skillet over medium heat. Add onion, red bell pepper, green bell pepper, garlic and crumbled tofu. Saute until vegetables soften and tofu gets slightly browned (approximately 7 minutes) stirring frequently to keep tofu from sticking. Add chili powder, salt and pepper, and continue to cook for several more minutes. Add water and bouillon paste, tomato paste, liquid smoke, Sriracha sauce, and tomatoes. Increase heat and bring to a slight boil, then immediately reduce heat to low, cover, and allow to simmer for about 15 minutes.  To serve, place in a wide shallow bowl and pile on your toppings!
