Haymarket Brewing - Edit
I have eaten that Haymarket brewing several times with non-vegans. They have always had a vegan burger, but the versions I’ve had have always just been OK. I personally would not go here by myself…I’d only go here if a non-vegan had asked me to. There are much better places for burgers in Chicago.

Good option before going to the UC - Edit
We got the hummus appetizer and split the chopped salad after the waitress let us know it was easily made vegan by taking off the cheese. The burger was just okay, seemed like a place that would do well selling the impossible or beyond burger.
