Kale Avocado Salad
Ingredients:
1 head curly kale
1 medium organic avocado skin and seed removed, flesh only
1 large fresh squeezed organic lemon juice
1 large organic garlic clove minced
1/2 teaspoon salt
optional 2 teaspoon nutritional yeast
Instructions:
Wash kale and remove the tough stems.
Place in a large bowl and tear into smaller bite-sized pieces.
Add salt, and massage with your fingers until kale wilts - takes a minute or two.
Add lemon juice, avocado flesh, garlic, and optional nutritional yeast.
Continue to massage with your fingers until all ingredients are well combined throughout the kale.
