A modern interpretation of Shojin Ryori Buddhist cuisine. Varied menu with rice & noodle bowls as well vegan sushi. Menu is mostly gluten-free. Open Tue-Thu 5:00pm-8:30pm, Fri-Sat 5:00pm-9:00pm.

Great food. We had the Brussels sprout chips with male Wasabi salt, absolutely amazing. The spicy silken tofu was beautifully present and very good. We got the tempura asparagus roll which was also awesome. We each got an entree: roast veg stack, yellow curry, and soba. All were so good and each unique in flavor and not lacking anything! A most go place in Durango

Tried Zen Cuisine for the first time this week. Nice atmosphere, great wait staff and the food was all great. Highly recommend it!

East by Southwest for veggies! - Edit
We adore East by Southwest, but their veggie/vegan choices are limited. They opened Zen Cuisine next door, they brought over all the best of their choices PLUS a whole lot more. We did the spring rolls, asparagus tempura sushi, Siam sushi, miso Raman, and udon, with the spicy edamame as an appetizer. Everything was excellent!! The service was beyond fantastic as well, with the head chef taking time to introduce us to items we didn't know.
Cons: Doesn't open until 5 for dinner.

A great experience in Durango - Edit
My girlfriend and I were headed back to Denver from a road trip and passed through Durango. We didn't expect much as far as vegan options but then we found Zen Cuisine on Happy Cow!
First off the restaurant has a fantastic atmosphere, it's a little smaller but it's comfortable and a great environment for dinner.
We started off with the truffled tofu and soybean dumplings which were completely amazing. I ordered the pho which had what was possibly the best broth I've ever had, while my girlfriend ordered an assortment of sushi, I can't comment on how good these were as she ate them all and didn't offer me any, so I assume they must have been great.
I would say that Zen Cuisine may be the sole reason for our next trip through Durango, I'm excited to come back.
