Wholesome, nourishing and wonderful

Yuka was a brilliant host who walked me around the local supermarket to buy and discuss ingredients that we were going to cook with. I spent almost four hours with Yuka, cooking together and discussing...well, everything! To venture a short distance into an inner city 'suburb' and cook in a local home was an experience enough but to also share stories of our lives whilst cooking together and me learning wholesome, nourishing dishes I will be able to replicate at home was great. I chose the traditional Japanese Soul Food lesson. We made Kombu Stock, fried tofu with veg, vegan rolled omelette, green veg with sesame, miso soup (the best I've ever had) onigiri and mochi. Yuka makes a few of the ingredients herself, the pickles and miso paste for example and the flavour is excellent. I'm a good home cook but this day reminded me of using quality ingredients, whole foods, taking time to slow down and be mindful with the food you are preparing and how wonderful it is to share not only the food but the time with people. Yuka has different lessons you can choose from depending on what you want to learn to cook. Being able to choose fully vegan or gluten free means everyone can learn something here. I'm working in Tokyo for four weeks and this has been an absolute highlight that I heartily recommend.

Fantastic private cooking lesson!

Myself, my sister and my cousin all visited Yuka’s home for this experience. We are aged 27-36 years.

We wanted to try our hand at traditional Japanese cooking. As one in the party does not like sushi and the other does not like gyoza, we settled on this class- best decision ever!

Yuka’s house is a little out of central Tokyo, but easy to get to with Tokyo’s excellent public transport system. Tip: make sure you can find the house on Google Maps. If you can’t, message Yuka in advance to check.

We all took turns helping Yuka make various dishes. We also learnt how to plate the food and present it in a traditional style-we all had great fun.

Yuka is VERY patient, as collectively we are not the most confident cooks or food preppers!

The whole evening was relaxed and enjoyable, with lots of chatting and sharing life experiences, including with her husband.

Yuka and her husband both speak great English.

Yuka is so knowledgeable about traditional Japanese shōjin ryōri cuisine and kindly explained the philosophy behind the food as we cooked.

You can see from the pictures attached the delicious food we created and thoroughly enjoyed eating afterwards!

Before leaving, we were given recipe sheets for the dishes we prepared so we can recreate them at home.

I would definitely recommend this experience!

Incredible Master to learn Buddhist Shojin Ryori

I was determined to take a cooking class in Tokyo, so I did it on my second day. I'm a flexitarian and have done Buddhist retreats in a monastery. I wanted to discover their secrets. 80% of cooking classes in Tokyo focus on three things: sushi, gyoza, and onigiri.

So I chose the Solo Friendly Japanese Vegan & Gluten-Free Buddhist Cuisine Cooking Class (Shojin Ryori).

Yuka is a wonderful chef. She learned from a renowned master, who is now 80 years old. She has given workshops in several countries. It's rare and precious to find a teacher with so much talent. She understands the mechanics of ingredients so well that she can adapt them with many alternatives. This cuisine has very delicate flavors, and I was able to understand how to cook without over-seasoning.

I also learned the art of presenting food in a traditional way, as well as the ritual for eating the meal.  It's rare to be able to cook and eat at someone's home; I find it more intimate than in a restaurant. Thank you again Yuka, you're wonderful!
