We go to YC's several times while here as snowbirds because it's our grandson's favorite restaurant. Lots of fresh vegetables, tofu and rice or noodles in one big portion. The prices are very reasonable for the whole family. They also offer soup and soft serve which are not vegan.
Pros: Vegan choices, Quick service, Reasonable prices

It's hard to go wrong as a vegetarian or vegan at YC's. There are plenty of fresh veggies and tofu if you'd like to add a bit of plant-based protein.
The only catch for very strict Veggies is that you're likely going to want to ask them to clean the grill as they will probably have cooked meat on the big grill.
This location is closest to my home and one of my favorites as all of the youngsters working here are friendly and recognize you as a regular.
Pros: Fresh vegetables, Plant-based protein, Friendly staff
Cons: No veg soup :(, Possible contamination of food
