Noodle stall, at 中正區懷寧街72號之32, serving a variety of noodles, rice dishes, and soups. Ask to leave out MSG (bu yao wei su). No English spoken, but you can point to food. Next to this stall is another small stall selling all vegetarian dumplings and filled steam bun. Open Tue-Sun 7:00am-9:00pm.

This was my first food stop in Taiwan. They had an English menu and the staff helped me order. Due to the price I assumed that the dishes would be relatively small so I ordered 4 dishes. They all came together within 5 minutes of ordering. They were huge portions! Couldn’t finish it all and it cost me around $200. The flat noodles with spare rib and the mock meat with rice dish were both exceptional. I’ll definitely be back here.

Small Taiwanese restaurant - Edit
I was looking for another place and accidentaly found this. It is really small and busy there. The menu was huge, two full pages, written in Chinese, English and Japanese. They made the food really fast but it took them a while to stop walking around so I can order. Can take out or eat in. I tried taiwanese vegetarian meat balls, nothing special but still good and satisfied, also really cheap. Spoken English enough to order.

The place is worth a visit, especially with a taiwanese friend that can help you out with the menu. I cannot say they were pretending not to use eggs as they were serving omelettes and they were making it right there in a corner of the stall. They definitely use eggs, but I had a nice meal with soup and noodles.

Fast & Cheap, but definitely NOT VEGAN - Edit
As other reviewers have noted, this place is cheap & cheerful, and a good chance to try a more traditional eatery, and so close to the main station. It's also a quick and easy meal.
Read moreHowever, don't be fooled by the claim (on the top of the menu) that it doesn't use egg. There's probably egg in the fake meat, and there's certainly egg (but probably not oyster) in the oyster omelette - I saw the big crate of eggs by the grill. And they don't even claim to not use milk, and I saw milk in the fridge beside my seat.
So the problem is that it's hard to know what doesn't contain fake meat (which probably won't be vegan) so I don't really recommend it, at least if you can't communicate with them in Chinese what you want. And given how busy they were, I doubt there'd be time for that anyway.
If you just want a vegan meal, it would probably be easier to just go around to the Loving Hut a few minutes away.

Cons: difficult to know what's vegan, they say they don't use egg when they do, difficult to understand (English) menu

Just across from the west bus station of Taipei main station. Unassuming place. Ask for the English menu if you can't read Chinese. Match the characters from the menu to the order card on the table. Mark on the card how many of each dish you want, hand it to the staff at the cooking area. Definitely recommend the wanton soup and oyster omelette. Food here is typical , unpretentious Taiwanese food.
