OK but difficult for non-chinese speaking vegans - Edit
The food that I tried there was ok, some quite nice, some rather bland. My main challenge was the communication. I do speak some basic Mandarin, but they seem simply not oriented towards non-Chinese speakers. If you can explain that you only eat vegan, no meat, no fish, no egg, no dairy, be prepared for lengthy explanations in Chinese (of which you will not understand much) and possibly leave with an empty stomach.
The English menu does not help much more than in identifying the dishes that obviously do have meat in them (many), but the 3-word-descriptions of the dishes does not say much about the suitability for vegans.
* Update * They do not seem to have the English menu anymore, so now - unless you can read Chinese signs - the only option that you have is to compare the pictures on the menu with the pictures posted here on Happycow. So, it has become even more of a challenge to get vegan food there.
Easy to find, and possibly a good choice if you speak decent Mandarin

Oat Noodle Restaurant - Edit
Xibei Youdian Cun (Oat Noodle Village) is home to oat noodles! The food is excellent and reasonably priced for this location/ venue (near People's Square). This is a good choice for one with gluten intolerance due the oat noodle selections available. As this is a chain with many locations in Shanghai, one can easily find a location near where you are staying. (The Chinese name is: 西贝莜面村)
Pros: oat noodle specialty, picture menu for non-Chinese speakers , reasonably priced (but not cheap!)
Cons: difficulty communicating in English

Xibei style chain with good vegan options - Edit
Xibei Restaurant is a chain serving Xibei specialities with locations all over Shanghai and other cities in China and a good option for vegans in Shanghai.
Lots of non-oily vegan options are available, such as home-made tofu, freshly steamed vegetables, dumplings, bread etc.
No english is spoken, but the menu has pictures as well descriptions in english.
Expect 70-80RMB per person for a group dinner.

Cons: Meat heavy restaurant, MSG used for some dishes, No english spoken
