Franchise Asian fast food eatery offer a 3-step menu with your choice of combination from different kind of noodles or rice, plus a fixed set of vegetables, optional extra ingredients (has tofu), plus sauce. I have been here a few times because it is very convenient and fast. I have always gotten the whole wheat noodles with veggies but if you are vegan you have to specify that you do not want egg in your dish. There are a lot of options for additional veggies, tofu, and seeds. You can pick a sauce as well and the vegan ones have a plant symbol next to them. Ones that do not may contain fish in the sauce so watch out for that. Overall quite good though.

I'm vegan an I ordered noodles without egg, but you can order any of the options without egg, and with any vegs you want and it was delicious! Staff was also very friendly and kind.

Average Asian-styled fast food store - Edit
You might find another several hundreds of Asian fast food places in Madrid, but it´s good to know that there is vegan-friendly one to go to where you don´t have to ask if this or that in the menu is vegan - other than that, there is nothing special about it. Last time I went, I had mixed vegetables with tofu, and it was not very good unfortunately.

Noodles galore - Edit
You can have your stir-fry noodles (or rice) with endless combinations of veggies, toppings and souces and a drink for 10,00€ or less. Plenty of choices for vegans and vegetarians, love to scoff some rice noodles here when going out in the area.
Pros: opens till late on weekends, hundreds of combinations, inexpensive
Cons: not many seats, a bit noisy when busy
