Vegan, when it has to be fast! - Edit
This is another fast food sandwich shop, but it refreshingly offers a satisfactory vegan option in a pinch when you're in a hurry. Their vegetarian sandwich with Bean Patty is excellent. You have a number of options of vegetables, garnishes, and mustard to make a reasonably healthy vegan option meal.

Black Bean Patty - Edit
They have a really good black bean patty for a create-your-own sandwich that I get every time we go here. Their house potato chips are also vegan.
