nice to have a veg option in Chumphon - Edit
This little place has been around for years. It offers the standard Thai veg dishes, mostly pre-made at about 7am (only time to come if you want to eat them hot). They also offer a few made to order options, including the usual noodle soups. They sell a few products as well. Nice owner who speaks no English. I was able to order a custom soup with no soy products that still tasted pretty good.
Pros: All vegan
Cons: Pre-made dishes not kept hot
