Ok but no proteins - Edit
The place looks good, there are some options to adjust to be vegan, staff is nice. The problem is there is no proteins in those options. Also quite hot as no fans are installed.

Limited options but tasty - Edit
The waitress here was really helpful in pointing out which dishes could be made vegan.
Read moreI had the Bali chicken (without chicken) both times which was essentially stirfry veg and rice but it was really tasty. Quite expensive given how basic it was though.
There’s not a huge amount of choice in Copan and so whilst this place isn’t perfect I think it’s the best option.

Best in Copán... - Edit
We asked for the veganizable dishes and apparently only the curry, pakora and plato tipico can be served without animal products. (The flour tortilla for the burrito contains milk) We opted for the curry and pakora. The curry had lots of veggies, but a bland taste. I think there was no curry paste, but just boiled veggies with coconut milk. The pacora came with a curry sauce with dairy yoghurt base. The sunset was nice from here though and we were happy to eat some veggies.😄

Not very vegan friendly - Edit
Was disappointed to see that even the curry we expected to be a vegan dish had chicken, as did most menu items. We ordered the curry with no chicken, pakoras (but they did not have them), Diablo fries (but we learned the hard way it had cheese in the curry sauce) and a salad. The salad came with hard boiled egg on it even though it did not say it on the menu. The dressing it came with was mayonnaise-based. They gave me oil and vinegar when I asked.
Read moreThe server was good, very attentive and worked hard to make the situation better. The place has a good atmosphere and good drink prices (Cuba libre 25L, margarita 85L) but we did leave fairly disappointed. A good bonus of Viavia is that you can book shuttles through their front desk so we booked the Luna Jaguar hot springs trip through them for $30/pp which was an awesome experience.
This might be the best option in Copan, but I hope they can improve the vegan offerings for future visitors.
Pros: Decent prices, Friendly service, Can book shuttles
Cons: Meat, dairy, and eggs on everything

Delicious! - Edit
The owner himself is vegetarian and very helpful to create vegan options, (even they are not explizit described in the menu) and as we stayed in his hostel he also made us a fantastic vegan breakfast! We were very happy to find this place.
