Best meals in Copán, most vegan-friendly options - Edit
Thank heavens for ViaVia Cafe! We tried a few other restaurants, but came back to ViaVia three times in as many days. It was one of the few places we could get nice servings of vegetables (there are no vegetarian restaurants in Copán).
The menu is about 85% vegetarian and there are plenty of great vegan options. Try the baleada with vegetables or the pasta with veggie sauce.
