This place was bustling with people but the service was good and attentive. The food was delicious and abundant. We ordered the vegan tacos and the stuffed sopapillas which were delish! They were also serving $3 margaritas which was a plus and probably why there were so many people there - so much so that they ran out of glasses and had to go out and purchase new glasses (they use ball jars for glasses) - interesting touch! Vegan/Vegetarian is clearly marked.

We ended up at Verde at the recommendation of a server at a different restaurant. It was tasty. Sopaipilla dish is fantastic, keiki burritos were a hit and my kids especially liked the rice.

Small casual place in a strip mall. Service was friendly and they had a good amount of options to choose from. The only thing that ruined it for me was that both things we got were drenched in their green sauce which was incredibly spicy. I didn't know this would be the case and i couldn't really eat much food, but for someone that loves spice this would be a great place.

My husband and I both had the smothered Verde, Verde burritos. They were really tasty. We would definitely go back. Vegetarian items clearly marked. Cozy place with counter ordering but they bring the food and drinks to you. Very friendly service as well.

Lots of veg/vegan options, but the highlight from two seaparte visits during our week long visit to Kaua'i were the great veggie stuffed sopaipillas with very fresh greens. Delicious salsas, especially the carrot/jalapeno/onion choice. Super friendly service and laid-back atmosphere.

Delicious New Mexican/Hawaiian fusion food - Edit
My husband and I, who both grew up in New Mexico, were amazed (and thrilled) to come across Verde on the isle of Kauai. The chef, who is from Albuquerque NM, serves New Mexican-style cuisine with a Hawaiian twist.

A sopaipilla is a delicious fried bread served throughout New Mexico. Traditionally served as dessert (drizzled with honey), it can also be stuffed with savory goodies (beans, rice, potatoes, etc.), covered with chile, and served as an entree.
Everything we've eaten has been great; portions are large. The complimentary tortilla chips are thin, hot, and delicious. The guacamole is excellent -- super creamy and wonderfully seasoned. Both salsas from the salsa bar are tasty.
Pretty much all items can be made vegan by omitting cheese; gluten-free folks can order corn tortillas instead of flour.
But if you're not avoiding wheat, do not miss the sopaipillas for dessert. (If you're vegan, skip the honey.)
Note that the red chile is NOT vegetarian (it contains chicken stock), but the green is. All chile comes from Hatch, New Mexico.
Our only minor complaint: The chile was not hot enough for us, though it does offer a nice little kick.
During our week on the island, we've eaten at Verde four times. We were thrilled to find a tasty delicious New Mexican meal outside of the southwest.
Don't be dissuaded by the fact that this little restaurant sits in a small, older strip mall in Kauai -- it offers delicious cuisine. If you like Mexican or New Mexican food, don't pass it by.
