Great fresh cheese and waffles - Edit
I had the chance to try Veggie Spanks' cheeses and waffles in a market. The waffle was topped with seitan, fresh cheese (so tasty!) and vegetables. It was excellent. I also tried a cheese made with almond but I was not really convinced by this one. It tasted cheese but the chunks of almond were too present. I also tried their faux-meat in various occasions and I really liked it. Keep going!
Pros: vegan cheese, waffles, faux-meat
Cons: hope they'll have a fix place
