This food stall offers vegetarian sandwiches and sticky rice, and the flavors taste good not bland. Owners disciples of Supreme Master Ching Hai. It's in District 5 and close to District 1, right off Tran Hung Dao. Huynh Man Dat is the street located right after Le Hong Phong if you are coming from District 1. Reported closed, Jan 2017. Open Mon-Sun 1:00pm-10:00pm.

Nice, cheap vegan food in district 5! - Edit
I live nearby and eat lunch here regularly, and it's really good value at between 35k-55k for a meal. It's always busy with locals so you know it's good! I recommend the Bun Thit Nuong Cha Gio (Rice noodles with soy meat and spring rolls), Banh Xeo (rice flour pancake with mushrooms) and the Hu Tieu Xao XO (Fried flat noodles with peppers and mushrooms).
Pros: Cheap, Tasty

Interesting little spot - Edit
Worth checking out to have a vegan street experience, but when I went this morning it was looking a bit bare compared to other stalls in the area. I'm sure it changes and may have some great options if you get there at the right time. Had a tasty dumpling with some fresh soy milk sold by another stand a half-block away.
Pros: Street food, Cheap, Friendly
Cons: Not much selection, Not the cleanest of places to eat, Noisy corner
